I had 1080i with my modded xbox dashboard as well. Having sharper dashboard graphics made all the games that much better ;) (lol)
Can try out setting your console to output at 720p and then again 1080i and let us know if you have any differences in performance, like framerate, screen tearing, etc.
I also wonder if outputting at 720p means it internal scales it to 720p or renders at 720p.. Some other games when outputted at 480p still render at higher resolutions.
